Quick and Easy Colorful Chili

Coming up with ideas for dinner is not always easy.  Everyone wants something different, and if you have kids there is a good chance that you hear a lot of "chicken nuggets" or "pasta".  It is probably pretty rare to hear, "a big bowl of something healthy".   When my son was little I needed to find ways to sneak in the veggies in his food.  I will never forget his face the day I gave him a cauliflower tater tot.  He knew something was not right instantly!  But, the days of trying to sneak in veggies was over the day I made this chili.  Now not only is it a meal that my entire family requests every week, but it is one that my son always goes back for a second serving of!  

I like to try to be as much grass-fed, organic, low sodium food items as possible, but this recipe can be made using whatever your favorites are.

QUICK AND EASY COLORFUL CHILI:

Prep Time: 10-15 minutes

Cook Time: 20-25 minutes (depends a little on how soft you like your peppers)

Total Time: 30-40 minutes


INGREDIENTS:

-1 pound 100% grass-fed ground beef

-1 (15 oz.) can Organic Low Sodium Black Beans- drained and rinsed

-1 (15 oz.) can Organic Reduced Sodium Pinto Beans- drained and rinsed

-1 jar Organic Tomato Pasta Sauce (this is the ingredient that makes kids love it)

- 4 Peppers (I like to use 1 Green, 1 Red, 1 Orange, 1 Yellow for color)

-1 Onion

-3 tablespoons Extra Virgin Olive Oil


INSTRUCTIONS:

1- In a pot add 1 teaspoon extra virgin oil and brown the meat over medium heat for about 5 minutes (until no longer pink inside), breaking it apart as you cook it.

2- In a large bowl add 2 teaspoons extra virgin olive oil and add peppers and onions.  Place the lid on the pot and stir every few minutes until desired softness.

3- Add in the black beans, pinto beans, the jar of sauce, and the cooked meat.

4- Cover and continue to stir ingredients occasionally on low/medium heat for about 15-20 minutes.


Other items that can be added/substitued:

Kidney beans, diced tomatoes, chili pepper, garlic, chili powder, cumin, hot sauce, black pepper, cheese, etc.


Serve in a bowl or with a side of tortilla chips!
